There's something so unique about Ghevar which instantly appeals to dessert-lovers all over the world. The Rajasthani sweet is made during the monsoon season and is an integral part of Rakhi and Teej celebrations. The interesting dessert has a honeycomb-like crispy texture which is subtly flavoured with sugar and then topped with dry fruits, saffron, or mawa. Have you ever wondered how the yummy Ghevar is actually prepared at sweet shops? A recently posted YouTube video shows the painstaking process. Take a look:

The video was shared on YouTube by food blogger Amar Sirohi, also known as Foodie Incarnate. It soon became one of the top 20 trending videos on the video-sharing platform, garnering over 846k views and counting. The blogger had captured the process of preparing Malai Kesar Ghevar at Hari Lal Sweets in Shahdara, Delhi.

In the 32 second clip, the entire process of preparing Ghevar is carefully captured. First, liquid ghee is poured into a pan which is then cooled down and solidified with the help of ice cubes. Then, Maida and water are added to the Ghee to create a smooth and consistent batter. This batter is kneaded for a good five minutes, then further sieved and filtered in order to remove any impurities or lumps.

The making of Ghevar involves a meticulous and painstaking process.

The sweet shop's cooks also added liquefied kesar to the Ghevar batter. Next, the batter was poured from a height into circular moulds placed in piping hot oil. The frothy batter solidified in no time forming the crunchy Ghevar. This process was repeated several times to create the layered, honeycomb texture of the Rajasthani sweet. Then the Ghevars were stacked in a tall column, and then dipped in sugar syrup, and topped with mawa, almonds, pistachios, and strands of saffron.
