One of the major factors in aging wines is acidity. Generally, a low pH (that means more acid), reduces the chances for the wine to be spoilt and betters the mellowing of the wine.Humidity
As long as the humidity is in excess of 12%, which is the moisture saturation point for a cork, the cork will not dry out and humidity has no other effect on the ageing process.
