How to Make Cheese Aloo Bonda
1.
Boil, peel and mash the potatoes. Cover and refrigerate.
2.
Mix besan, ajwain, 1 tsp turmeric powder (haldi), chilli powder, 1 tbsp oil and water as required to form a thick batter. Cover and set aside for 10 minutes.
3.
Pound ginger, garlic and green chillies together to make a coarse mixture.
4.
In a pan, heat 1 tbsp oil and add cumin seeds, mustard seeds and curry leaves.
5.
Then add the pounded mixture prepared earlier to the kadhai. Saute for a minute and add chopped onion. Saute again
6.
After a minute, add turmeric and salt. Next, add the corn, coriander leaves and chaat masala.
7.
Now, add the mashed potatoes and combine all the ingredients well. Turn off the heat and allow to cool until it reaches room temperature.
8.
Cut each cheese cube into 4 pieces. Once cooled, make a small ball of the potato mixture, press a cheese piece into the centre and seal it well. Repeat the same process for the remaining mixture.
9.
Dip the balls into the besan batter and deep fry until golden brown. Serve the bondas hot with ketchup and hari chutney.
