Chinese sauces meet Indian curry paste to create this lovely lamb dish.

Ingredients of Curried Lamb Strips
- 250 gm lamb - shredded
- 2 tsp raw papaya paste with skin
- 1 Tbsp fish sauce
- Coarsely ground black pepper
- 1 bunch Chinese lettuce
- 2 Tbsp oil
- 1 Tbsp fish sauce
- 2 tsp sugar
- 4 shredded lime leaves
- For the curry paste:
- 2 Tbsp roughly chopped lemon grass
- 2 tsp grated lemon rind
- 1 Tbsp ginger paste
- 7 small dried red chillies - soaked in water for 15 minutes
- 2 1/2 tsp garlic paste
- 2 small onions
- Salt
How to Make Curried Lamb Strips
1.
Pound together all ingredients except chillies to form a curry paste.

Chop the chillies and add to the paste.

Place lamb in a bowl. Mix in papaya, fish sauce and pepper. Set aside for 20 minutes.

Heat oil in a pan. Stir in curry paste. Cook for 5 minutes.

Add lamb. Stir until just cooked through.
6.
Add Chinese lettuce leaves. Stir well.
7.
Add fish sauce, sugar and lime leaves. Cook for 3-4 minutes.
8.
Serve hot with rice.
