Everyone loves biryani. This one-pot dish has been popular for a long time, despite its numerous variants and preparation methods. If you're searching for something different from the usual meat-based biryanis, try this jackfruit (kathal) biryani recipe. This innovative vegetarian biryani uses raw jackfruit and is very tasty. The raw jackfruit gives its own juicy flavours to the rice, making this one-pot recipe incredibly tasty.

Ingredients:
Kathal Chunks – 5 cups
Salt
Chilli powder – 2tsp
Turmeric – ¾ tsp
Coriander powder – 1tbsp
Ginger paste – 1 tbsp
Garlic paste – 1 tbsp
Bhuna besan – 3 tbsp
Oil – 4tbsp
For jhol
Oil – 1 cup
Shahi Jeera – 2 tsp
Cardamom – 5
Cinnamon stick – 1
Onion sliced – 2½ cups
Garlic paste – 1 tbsp
Ginger paste – 1 tbsp
Water – a dash
Turmeric – ¾ tsp
Chilli powder – 1tbsp
Coriander powder – 1½ tbsp
Curd – 1½ cups
Salt to taste
Cardamom powder – ½ tsp
Mace (javitri) powder – ½ tsp
Kewra water – 1 tbsp
Rose water – 1tbsp
Green chilli – 2
Mint leaves – 1 cup
For rice
Basmati rice – 3 cups
Water – 3 litres
Salt – handful
Green chilli – 1
Cardamom – 4-5
Rose water – 1 tbsp
Kewra water – ½ tbsp
Saffron (dissolved in 2tbsp milk) – a pinch
Water from Blanched Rice – 1 cup
Ghee/Leftover oil – 3 tbsp
Mint leaves – a handful
Fried onion – a handful
Dough – for sealing

How to make kathal biryani?
1) First of all, marinate the kathal chunks properly using chilli powder, turmeric, coriander powder, ginger garlic paste, bhuna besan and salt.
2) Shallow fry the kathal pieces on a tawa with very little oil. However, they should turn brown. Once done, remove and keep them aside.
3) Now, prepare a nice jhol using the mentioned ingredients and add the marinated kathal pieces to it. Let it cook for a few minutes. Put the soaked and drained rice into it.
4) Spread the rice properly over the gravy (kathal chunks). Cover the container with the lid and seal it properly using a dough. Follow the popular dum method of cooking biryani. Once ready, remove your handi from the heat and let it rest for about ten minutes. Serve hot.
