Whichever side of the argument you may be on, nutritionist Pooja Makhija has a healthy solution for your snack cravings. Pooja shared a video on her Instagram timeline wherein she whipped up a creamy and sumptuous-looking carrot dip that left us salivating. In the caption alongside the post, Pooja wrote, “I love dips! They are the best way to snack with variety, taste, and health - all factored in. Almost any vegetable can be made into a dip, but this time let's do carrots.”

For those who have access to sumac, Pooja said they could add it to this dip as “it enhances the flavour markedly”. She also joked that a friend called it “carrot ki sabji and not a dip”, and added that “it was one tasty sabji”.

Carrots are a rich source of vitamin A and beta-carotene. They are loaded with fiber, which helps regulate blood sugar levels. Carrots have calcium as well as vitamin K, which are essential for good bone health and strength.

To make Pooja Makhija's carrot dip, you will require the following ingredients:

  • Garlic
  • Tomato Puree
  • Almonds
  • Onions
  • Chilli Flakes
  • Salt
  • Smoked Paprika
  • Cumin Powder
  • Lemon Juice
  • Orange Juice
  • Coriander leaves
  • Oil

Here's how to make it:

In a pan, heat some oil and saute onions until they soften. Add chopped garlic and diced carrots and stir. Add in chopped almonds, tomato puree, chili flakes, cumin powder, and fresh coriander leaves. Mix well until the carrots soften. Add smoked paprika, lemon juice, and orange juice along with salt and mix well. Once all the ingredients have cooked well, blend the mixture until smooth. Top with coriander leaves and enjoy.
