Lotus stem grows at the root of the lotus flower and is edible. Also known as 'kamal kakdi' in Hindi, lotus stem is used in many culinary creations across the globe. Due to its crunchy texture and mild sweet taste, lotus stem is most commonly turned into crispy chips for snacking. Here, in India, the vegetable is usually paired with potatoes to make sabzi for the main meal. To try something different with it, here's a recipe of kamal kakdi chaat, which is super healthy and perfect for evening tea-time snacking.

Lotus stem not just offers its overwhelming flavour, it also provides its high nutritive value. According to Nutritionist Dr. Simran Saini, "Lotus stem is one of the healthiest foods around. It is packed with vitamins B and C, fibre, potassium and iron." Given the presence of a high amount of potassium and iron, lotus root is especially good for people struggling with high blood pressure.

To make this chaat, first pressure cook lotus stems in some water till tender, and let it dry. Stir fry thin ginger slices in a pan till it changes colour to light brown and keep aside. Saute cumin seeds, when they crackle, add lotus stems and season with salt, black pepper powder, chopped green chillies and lemon juice. Stir fry for about 2 minutes.

Now, it's time to plate it up. Place the lotus stems on a plate and top it with whipped curd, green chillies, sliced ginger and tamarind chutney. Your kamal kakdi chaat is ready to be served!
