The ubiquity of potatoes can be put down to its versatility. This vegetable, especially in its milled form, is used to make a variety of dishes - aloo tikki, aloo paratha, sandwich and more. Mashed potatoes are also used as a side dish with various continental and Mediterranean meals like salads and steaks. Because of its creamy, paste-like texture, mashed potatoes enhance the taste of any dish it is paired with. It is a delicious treat, however, not really great for someone on a weight loss diet. Apart from high fat content of potatoes, the cream or butter that is added to it raises the content of saturated fat in the dish.


Instead of foregoing all that we love to eat, we dug in hard and came up with a surprisingly effective alternative to mashed potatoes - mashed cauliflower! Yes, our very own gobhi can be crushed down to a pulpy paste that feels just like mashed aloo. Both potatoes and cauliflower are nutrient-rich vegetables, but cauliflower contains fewer amounts of fats, calories and carbohydrates than potatoes.
You can replace aloo mixture with ghuti hui gobhi and use it as a filling or a side dish for your favourite meals. Since, the whole point of making these 'mock' mashed potatoes is to have something healthier and low-fat, why not go the whole hog and make it sans any heavy cream. The nutty flavour of cauliflower needs nothing than its own stock, little butter and salt to do the trick.

Cauliflower contains fewer amounts of fats, calories and carbohydrates than potatoes

Here's How You Can Make Low-Fat, Low-Carb Mashed Cauliflower:
 

Ingredients:
1 cauliflower floret
1 tablespoon butter
Salt to taste
Garlic - 3-4 cloves, crushed

Preparation:
1. Chop cauliflower into small pieces and saute it with the garlic in butter until the veggie and garlic start changing colour (light brown).
2. Pour water until the cauliflower is just immersed and let it boil till the veggie cooks and wilts.
3. Sift it through a sieve but store the drained water (stock).
4. Place the cooked cauliflower in a large bowl. Add some of the stored cauliflower stock to mash the cauliflower completely till you get the desired smooth consistency.

 The cauliflower stock fills in the place of cream and lends a sufficient degree of mushiness and creaminess to the mixture. You can avoid garlic if you want to; this dish will taste as good. Serve mashed cauliflower with chips, chicken steaks, or sauteed vegetables. Or eat it the desi way and fill it in tikkis and parathas. Without any worry of gaining excessive weight, you can lap up this delish dish as much as you want.
