Right from drool-worthy gajar ka halwa to some wholesome desi curries, we prepare a whole lot of interesting dishes with carrots - popular this season. For the uninitiated, apart from the famous red ones, there are black carrots too available in winters. It's healthy and is loaded with antioxidants and other nutrients. One such traditional drink that has garnered the trust of our mothers and grandmothers happens to be kanji. Many people cook up flavourful gajar ki kanji using black carrots. Ingredients:
1) Black carrots 300 grams
2) 2.5 tablespoons of chilli powder
3) 2.5 tablespoons of yellow mustard powder
4) 1.5 tablespoon of salt
5) 1/4 tablespoon of haldi
How to make kali gajar ki kanji?
1) First of all, wash and peel the black carrots and chop them into pieces vertically. After this, boil water and soak them in about 2 litres of water for 15 minutes or so.
2) Now, it's time to add other ingredients to it. Put the mentioned amount of chilli powder, mustard powder, salt to taste and some turmeric. Mix it all well and bottle in a glass jar.
3) This is an important process. You need to let the dish ferment for 5 days in a cold climate or 3 or 4 days in warm cities. Make sure your jar gets ample sunlight.
4) After all this process, you are allowed to judge the kanji from its taste. It has to be nice and tangy and well fermented. And you are good to go.

Once, he demonstrated the process of making strawberry jam. Yes, it's completely homemade so you can be assured that it's healthier as compared to the readymade ones.
For this, first, he took strawberries into a pan and cooked them until they got mushy. He then added 3 tablespoons of honey and mixed well. The next ingredient was lemon juice to go into it. Finally, he added chia seeds and cooked the mixture until it turned thick. The strawberry jam was ready.
