Nothing works like an icy cold dessert to bring in satiation and some respite from this sweltering weather. Most of the Indian desserts that are cooked at home are usually served hot and also contain a lot of ghee. This does not really sit well on our palate and stomach in summers. So, here's a dessert that can be easily prepared at home, which is delicious, lightweight and wait for it, icy cold! Custard is not considered a traditional dessert but is still loved by many people for an after-meal sweet treat. It is a pastry cream, also known as sweet sauce, which is basically a combination of thickened milk or cream, eggs (optional), sugar, starch and a flavouring agent like vanilla, strawberry, coffee etc. It has a silky smooth texture and just melts in the mouth when eaten.

Custard is a versatile dish that also serves as a base for pies, tarts and puddings. A plain custard cream can be perked up by adding other products like fruits and nuts that complement each other along with the cream pastry. The only fruit that we salivate for in this season is mango. It is a nutrient-rich summer fruit that brings in its healthful properties to any meal it is added to. Summer dessert: Mango custard brings forth the true flavour of the mango fruit

Mango Custard Recipe -
 

Ingredients:

Half cup vanilla custard powder (easily available at grocery stores)
1 cup milk
2 ripe mangoes
1 cup sugar

Method -

1.   Peel and cut the mangoes into small chunks and puree them in a blender with some milk.
2.   Pour rest of the milk in a large bowl. Add custard powder and whisk well till no clumps remain.
3.   Place the mixture on gas and add sugar. Stir and cook till the sugar is dissolved completely.
4.   Add mango puree, give it a thorough stir and switch off the gas.
5.   Add a dash of lime juice (optional).
6.   Place the custard in the refrigerator for at least three hours. Garnish with mango cubes and mint leaves (optional) and serve cold.

This mango custard dish is easy to make and can be rustled up in under 30 minutes. If you don't have much time in hand, you can keep the mixture in the freezer for around 1 hour and serve as a decadent summer dessert
