How to prepare:

In a food processor or mixer, add frozen mango pieces, sugar, lime juice and a pinch of salt. Depending on your appliance and the consistency of the mango, you may need to add a little water to get a smooth mixture. You should also scrape down the sides to ensure there are no pieces remaining. Blitz all ingredients to form a smooth pulp. Taste to adjust sweetness as required.

Enjoy a soft sorbet immediately. If you want a firmer texture, transfer the mixture to a sealed (and ideally, pre-frozen) container and set it in the freezer for three hours or more. Remember to allow the frozen sorbet to thaw for 5-10 minutes at room temperature before scooping it to serve. You can store the sorbet in your freezer for several days.
