  • To prepare this, all you require are some easily available ingredients such as chicken pieces, carrot, onion, water, and some spices and herbs like bay leaves, rosemary, dried thyme, peppercorns and more.
  • In a soup kettle, combine all of the ingredients. Add enough water, bring to a boil slowly, then reduce heat to a low simmer. Simmer for 1-2 hours, uncovered, skimming foam as needed.
  • Set aside the chicken until it is cool enough to handle. Remove the meat from the bones and then remove the bones and save the meat for another use.
  • Once done, remove the vegetables and seasonings from the broth and set aside. Refrigerate for at least 4-5 hours or overnight. Using a ladle, large spoon, or skimmer, remove any fat and scum from the surface.
