Winter is upon us and the nip in the weather makes us want to indulge in all things delicious. With winters come a host of delicious seasonal vegetables for us to enjoy. Be it palak, methi, radish or broccoli, these tasty veggies not only offer different flavours and textures but are also loaded with several health benefits. Speaking of winter vegetables, one such vegetable that is extremely popular during the winter season is the carrot (gajar). As soon as carrots hit the market, we buy them in bulk and make dishes such as gajar ka halwa, gajar kheer and so on. Considering this, here we bring you a delicious gajar paratha recipe that is ideal for your winter breakfast.

Parathas are one of the most loved breakfast options in North India. They are super easy to make and can be relished as is or stuffed, as per your liking. This gajar paratha is made using grated carrots that are mixed in whole wheat flour and flavoured with cumin seed powder, green chillies and coriander leaves. Top it with a dollop of butter and serve with curd and pickle. Check out the recipe below:

To begin with, take a large mixing bowl, add grated carrots, wheat flour, ginger, cumin seed powder, chopped green chillies, red chilli powder, chopped coriander leaves and salt to taste. Mix well. Now, add water in small portions to knead a soft dough. (Make sure not to add too much water as the carrot itself will leave water at this stage.)

Now, take a portion out of the dough and roll it nicely. Heat a tawa on medium flame. Cook the paratha evenly from both sides until it becomes golden brown. (Apply a generous amount of ghee or oil while cooking it.) Gajar paratha is ready! Serve hot and enjoy!
