A perfectly cooked turkey is usually a common sight on the dinner table in American households on Thanksgiving. While most of us may already be familiar with preparing a turkey, Indian-American celebrity Padma Lakshmi shared a slightly different recipe that you can definitely try this Thanksgiving.

In an Instagram Reel, Padma Lakshmi took us through the steps to prepare a lip-smacking turkey with a lassi twist. “A riff on my classic buttermilk brined turkey but with lassi! tenderizing meat in yoghurt is an age-old Indian practice,” she wrote.

To begin with the recipe, first, arrange the ingredient below.

For the brine or marinade:

Bay leaves – 8

Plain lassi – 4-6 bottles

Granulated sugar – ½ cup

Coarse sea salt – ½ cup

Black pepper – 1 tbsp

Ground cayenne pepper – 1 ½ tsp

For the turkey

Turkey – 1 whole with neck and giblets removed

Bay leaves – 20

Fuji or Honeycrisp apples – 3 cored and cut into wedges

Granny Smith apples – 2 cored and cut into wedges

Sliced fennel bulb – 2

Sliced red onion – 1

Sliced yellow onion – 1

Thyme – 1 small bunch

Fresh ginger – 10 slices

Garlic – 12 sliced cloves

Orange – 1 cut into 1-inch wedges

Toasted black pepper – 1 tbsp

Lemon

Extra-virgin olive oil

Coarse sea salt

Follow the steps below to prepare the turkey:

Step – 1 Take a pot and pour the lassi into it.

Step – 2 Add sugar, black pepper, ground cayenne pepper, and bay leaves to the pot and mix everything.

Step – 3 Keep the turkey inside the pot and refrigerate it for three days. Remember to turn the turkey upside down every 12 hours.

Step – 4 Drain out the brine and remove the excess lassi.

Step – 5 Season the cavity of the turkey with sea salt and stuff it with black pepper, orange, lemon, ginger, garlic cloves, and bay leaves.

Step – 6 Take an oven tray and place yellow and red onion, fennel bulbs, bay leaves, ginger, black pepper, and thyme on it to prepare a bed for the turkey.

Step – 7 Place the whole turkey inside the tray and drizzle some olive oil on it. Then add apple wedges and rub the turkey with salt.

Step – 8 Cook the turkey in an oven and enjoy the feast.
