It is huitlacoche, also known as corn smut. Yes, you heard that right. Huitlacoche is a fungus that grows on corn. There is a video showing how to whip up an empanada with huitlacoche. The video claims that in Mexico, people consider Huitlacoche a delicacy. But the comment section is where the real action is. To make huitlacoche empanadas, the woman followed some simple steps. First, she cooked the huitlacoche with salted butter, shallots, and garlic in a pan. Then, she combined it with Chihuahua cheese, onions, and cilantro. Afterwards, she chilled the filling in the fridge before using it to stuff the empanada dough. Once the empanadas were sealed, she deep-fried them. She made sure to capture the moment of the cheese pulling apart on camera. In the caption of the video, the woman revealed how people wanted her to cook huitlacoche quesadillas, but she chose to whip up empanadas. She wrote, "Last time, I made huitlacoche. Everyone told me to make a quesadilla with it but today I was really in the mood for cheesy empanadas! I love fried empanadas the most and the dough I got was dyed with natural annatto seeds for extra color." The video went viral, racking up an impressive 6 million views and attracting thousands of comments. Unfortunately, the majority of these comments were on the negative side.
