Most of us have tried thukpa at some point; the luckier ones have tried it amid the mountains. But for those who haven't heard of the dish, thukpa is a soothing noodle soup, made with a bunch of spices, veggies and meat.

This Ladakhi chicken thukpa uses the goodness of chicken legs, ginger, carrots, green chillies, soy sauce, lemon, spring onions, coriander leaves, garlic and olive oil. The recipe also uses egg noodles; you can use regular noodles if you want. You can also play around with consistency, if you want it thinner, you can add more water to the soup. This super simple recipe is ideal for this weather, and so incredibly easy to make at home.
