Cooking is often considered as a stress buster; but there are times when you feel too lazy to cook. Imagine those lazy afternoons when you are hungry, but just don't feel like cooking anything! What do you do then? Many of you will say that you can get food delivered. But, ordering-in can always not be a feasible option. It is at this point that you need to drag yourself to the kitchen, regardless of how hard you have been trying to avoid the kitchen. But fret not, we have a solution for you! Here we bring you a foolproof recipe of khichdi, which is simple and can be made effortlessly in no time.

Khichdi is the ultimate meal for any person who is not feeling like taking any extra effort for cooking. All you need to do is- add all the veggies, dal, chawal, haldi and salt in a pressure cooker and cook. It hardly takes 10 minutes to cook a khichdi. In such way, you not only get a quick, easy and comforting meal, but also some vital nutrition for your body.

Ingredients:

Rice- 1 cup

Mixed dal- half cup

Asafoetida (hing)- half tsp

Jeera- 1 tsp

Dry red chilli- 2

Vegetables (whatever you have at home)- half cup

Onion- 1 (thin slices)

Ginger- 1-2 tsp (grated)

Green chilli- 1 (chopped)

Tomato- 1 (small cubes)

Ghee- 1tbsp

Oil- 2 tsp

Jeera powder- 1/2 tsp

Dhania powder- 1/2 tsp

Haldi- 1/2 tsp

Kashmiri red chilli powder- 1 tsp

Salt- as per taste

Sugar- as per taste

Method:

Wash and soak daal and rice for 30 minutes.

Heat oil in pressure cooker and add onion. Fry until golden brown.

Add ginger and chilli and fry till the ginger releases aroma.

Add tomato, haldi, jeera powder, dhania powder, Kashmiri red chilli powder, salt and sugar and mix well.

Cook for 3-4 minutes in medium flame and add vegetables to it.

Cook it for 5 minutes and add the soaked rice and dal. Mix them well.

Add two cups of water and close the lid. Let the cooker whistle thrice to four times. Switch off the flame.

Now, in a pan, put ghee, hing, jeera and red chillies and let it crackle.

Open the lid of the pressure cooker and add tadka to the khichdi.

Hot and comforting bowl od khichdi is ready to be enjoyed with papad and achar.
