In this recipe, baingans are fried and cooked in a rich and flavourful gravy. This dish is cooked in a lagan which allows the flavours to get fully absorbed in the baingan. You can have this delectable sabzi for lunch or even for dinner. Pair it with any Indian bread of your choice and relish its taste. So, without further ado, let's take a look at the recipe: 

Dum Ke Baingan Recipe: How To Make Dum Ke Baingan 

First, we need to prepare the gravy for the dish. For this, grind roasted peanuts, roasted sesame seeds and roasted desiccated coconut to form a smooth paste. Once done, add coriander powder, red chilli powder, jeera powder, turmeric, salt, fresh mint and coriander leaves. Mix well.

Slit the baby brinjals (baingan) into quarters and shallow fry them in oil over medium flame. Keep aside. Now, heat some ghee in a lagan. Add methi, kalonji and cumin seeds and allow them to splutter. Add slit green chillies, curry leaves, ginger-garlic paste and the prepared gravy. Next, add water and tamarind paste and allow it to cook until the oil rises. Finally, add the fried brinjals and combine everything together. Serve hot!
