Start by blending two cups of mixed sprouts coarsely in a mixer grinder. Transfer the coarse paste to a bowl and mix in one cup of yogurt and one cup of sooji. Combine thoroughly and let it rest for 30 minutes. After resting, gently fold in one sachet of fruit salt. Grease a steamer tray and form small balls from the sprouts mixture, placing them on the tray without overcrowding. Steam for 15 minutes or until soft. Meanwhile, whisk two cups of yogurt, adding salt and sugar or stevia to taste. Once steamed, immerse the bhallas in the yogurt and refrigerate for 30 minutes. Before serving, garnish with roasted cumin powder, red chilli powder, spicy coriander chutney, and tangy tamarind chutney.
