Cucumber chutney is popularly consumed in south India, especially in Mangalore and goes by the name of Southekkai chutney. Here, we are making a simple version of this chutney for a quick-fix recipe that you can rustle up in less than 15 minutes.

Cucumber Chutney Recipe -
(Make 1 bowl for 4-5 people)
Ingredients -
1 cucumber
1 tsp chana dal
2-3 green chillies
1 tsp minced garlic
Half tsp mustard seeds
5-6 curry leaves
2 tbsp grated coconut (optional)
Salt to taste
1 tsp tamarind pulp
A pinch of hing
Method -
Step 1 - Peel and chop the cucumber. Blend it with coconut, garlic, green chillies, salt and tamarind to make a smooth paste.
Step 2 - Heat some oil in a pan, add, hing, mustard seeds, chana dal and curry leaves till they crackle.
Step 3 - Pour the tamarind over the cucumber paste, garnish with some chopped cucumber cubes, coriander leaves and serve.
This creamy, tangy, slightly-sweet chutney is so delicious, you'll end up making it all the time. Perfect to go with dosa, idli and vada, this chutney can also be paired with parathas and biryani.
