Street foods are an integral part of Indian cuisine. You get a variety of snacks and small meals at snack stalls, carts and roadside dhabas. For chicken lovers, there's nothing like tawa chicken masala that you largely get at these tiny eateries. Just like any other street food, tawa chicken masala is big on flavours and spiciness, making it one of the best pocket-friendly, filling meals you can get on the streets. Usually paired with roomali roti or naan or tandoori roti, tawa chicken masala is just what you need to cook at home to bring back all the memories of your foodie outings before lockdown.
Local eateries and dhabas use large thick iron griddle to make tawa chicken masala. Chicken is roasted and coated with full-of-spices onion-tomato masala, all done on one pan. If you have a thick-bottomed cast iron tawa at home, you can easily make this spicy chicken dish with the right recipe.

Step-By-Step Recipe Of Tawa Chicken Masala:
Ingredients -
500 grams chicken
3 large or 4 medium onions
3 medium tomatoes
Hal cup tomato puree (optional)
4-5 garlic cloves, crushed
Half inch garlic, grated
1 green chilli
1 inch cinnamon stick
1 bay leaf
3-4 cloves
3-4 peppercorns
Salt and red chilli powder to taste
1 teaspoon garam masala
Half tbsp. chicken powder
1 tbsp curd
2 teaspoons fenugreek leaves, crushed
Coriander leaves for garnishing
For marination -
2 tbsp curd
2 tsp ginger-garlic paste
Half tsp red chilli powder
Juice of half lemon
A pinch of turmeric powder
Salt to taste
Method -
Step 1 - Marinate chicken pieces in the mixture of curd, lemon juice, salt and spices and keep it for at least one hour.
Step 2 - Heat some oil in thick tawa and roast chicken pieces. Take out the chicken and keep aside.
Step 3 - Heat ghee in the same tawa, add all raw spices and roast.
Step 4 - Add onions, garlic and ginger and cook till onions turn brown.
Step 5 - Add tomatoes, salt and rest of the spices. Add tomato puree also, if using. Let the masala cook. Add one tbsp. curd and mix well.
Step 6 - Add back roasted chicken and mix well so that all the chicken pieces are well coated with the masala. Add crushed fenugreek leaves and mix again.
Step 7 - Turn off the gas. Garnish tawa chicken masala with coriander leaves and some lemon juice if you want to.
Although tawa chicken masala goes best with roomali roti but it will still taste just as great with paratha or plain roti. Enjoy the dhaba-like flavours of spicy chicken dish in the comfort of your home.
