Croissant is a cherished French pastry that has found its way into the hearts of people around the world. It comes in an array of delightful variations, from the decadent chocolate croissants oozing with melted chocolate to the fruity ones featuring fillings like strawberry or raspberry. Then there are the savoury croissants that come with fillings ranging from cheese and ham to spinach. But in today's culinary landscape of inventive twists, there is an Indian take on this French delight. What is this unique twist, you ask? Well, Indian Chef Bharat Wadhwa gave the croissant a desi makeover, and he shared the creative process on his official Instagram handle.

The process begins with the preparation of the dough by combining all-purpose flour, salt, carom seeds, and oil. A touch of water is added to form a dough, which is then left to rest for about half an hour. Next, a ball of this rested dough is taken and rolled into a flat, circular shape resembling roti. In a separate bowl, boiled potatoes are grated, and spices such as red chilli powder, garam masala, and salt along with chopped green chillies, and coriander are added. A bit of cornstarch is incorporated to bind everything together, resulting in a flavorful potato mixture. Returning to the flattened chapati, a katori is placed in the centre, and the potato mixture is generously spread around it. Subsequently, the katori is lifted, and a pizza cutter is used to slice the chapati into little triangular portions. Each triangle is then delicately rolled up to create a croissant-like shape. Finally, these delightful desi croissants are fried to perfection before being served.
