Idlis are not only a South Indian breakfast staple. They have garnered widespread popularity in many parts of India. Over the years, the dish has undergone several taste twists. One such variation is the Chiblu Idli. A detailed demonstration of how this soft and fluffy steamed rice cake is prepared traditionally was shared in an Instagram video on the page '@foodie_incarnate. The ingredients are the usual ones but the bowl they are prepared in and the method of preparation is what sets these idlis apart.  

The video opens with a man pouring thick-slurpy, butter-slathered coconut chutney into small chiblus. ICYDK, chiblus are handmade bamboo cups that mold the idli batter into the perfect oval shape. Once the process was completed, the cook placed those tiny cups onto a steamer. Additional wooden sticks were positioned inside the large container to create more layers. Soupy vegetable stew poured into chiblus was kept on the topmost wood-piled layer. 

Once all the batter-stuffed chiblus were inserted into the steamer, it was time for cooking. The man covered the steamer with a cloth and then with a lid. After a few minutes, the lid was opened. Fresh steam started to sizzle in the air, indicating that the light cushiony Chiblu Idlis were ready. The South Indian delectable was then served on palm leaf-lined plates. Adding to the lip-smacking taste was the delicious coconut chutney — an additional flavour booster.

Foodies queued in the comments to share their impressions on the Chiblu Idli preparation. “This must be so good,” exclaimed one user confidently.

Sharing their knowledge on the South Indian breakfast item, a food enthusiast wrote, “Steaming on a cloth and wooden baskets lets the steam get to it from the bottom as well.”
