One more way to enjoy it is as a sandwich - simply add it between buttered bread slices and grill them. If you already have hari chutney at home, you can use it in place of the mint-coriander puree mentioned in this recipe. Simply adjust the salt and spices accordingly. You can use either regular potatoes or baby potatoes for this recipe. Boil, peel, dice the potatoes and set aside. Blend coriander leaves, mint leaves, green chillies, ginger and lemon juice to get a thick green paste.  Heat oil in a pan and add cumin seeds, asafoetida, and the green paste prepared earlier. Stir and add spices such as turmeric, dry mango powder, salt and others. Add the diced potatoes and combine all the ingredients thoroughly. Add water if required to help the masala coat the aloo better. Garnish with mint or coriander leaves and serve hot.
