Here's a quick and easy roasted chicken masala recipe that you can try at home for your weekend evening feast with the family. The key to this tantalising recipe is the freshly ground tandoori masala made by grinding dry-roasted spices such as coriander seeds, green cardamom, cinnamon, bay leaf, black cardamom, cloves, cumin seeds and turmeric powder. The chicken is then marinated for half an hour in this masala along with curd, peppercorn, chaat masala, red chilli powder and ginger-garlic paste. The marination bowl is covered with a thin transparent sheet for it to set. The chicken pieces are then roasted to perfection for about 20 minutes. You can roast it in microwave or air fryer as well. Serve it with a tang of lime squeezed on top along with some chaat masala.
