Vitamin D has been in the news for some time now. Also called 'sunshine vitamin', it is one important nutrient that our body needs for various functions. Moreover, it has a greater implication during the ongoing situation (read: Coronavirus pandemic). As per an earlier study published in 'The Journal of Clinical Endocrinology & Metabolism', 80 percent people affected by COVID-19 may suffer from vitamin D deficiency, which can further lead to low immunity, weak bones, respiratory troubles and more. Vitamin D deficiency may also lead to hair loss, obesity and overweight and related severities (diabetes, cholesterol et al). Hence, health experts across the globe are time and again stressing on nutrient-rich diet for healthy living.

While sunlight is the most natural source of vitamin D, we all are being extra cautious about stepping out of home during the pandemic. Instead, we can consider including vitamin D-enriched food items in everyday meals for overall nourishment. Two of the most popular sources of vitamin D are mushroom and yogurt. Keeping this in mind, we bring you a simple sabzi made with yogurt and mushroom that can be included in your diet for daily vitamin D-fix. It is quick, fuss-free and can be whipped up with just a few basic ingredients we have in our kitchen. Let's check out the recipe!

Here's The Recipe For Dahi-Mushroom Sabzi:

Ingredients:

2 cups mushroom, chopped

1 cup dahi/curd

Half cup chopped onion

Whole garam masala (cloves, cinnamon and cardamom)

1 whole dry red chilli

1 teaspoon cumin powder

Half teaspoon turmeric powder

Half teaspoon Kashmiri red chilli powder

Oil, as per need

Salt, as per taste

Chopped coriander leaves, to garnish

Method:

Heat oil in a pan and add the whole garam masala and dry red chilli. Let it temper.

Add the onion and fry till it turns translucent in colour. Add salt to taste.

Make a paste of dahi, turmeric powder, Kashmiri red chilli powder and cumin powder and add to the pan.

Cook everything together. Add some water, if needed.

Throw in the mushrooms, add some salt and close the lid and let it cook for 5-6 minutes on medium flame.

Open the lid and see if the mushroom is well cooked. If you are satisfied with the look and texture, switch off the flame and garnish with some coriander leaves.

Pair the dish with roti and salad and put together a wholesome meal for your family.
