In this recipe, the classic South Indian coconut rice is tweaked a bit to make it ideal for the dieters. Here, the white rice is replaced with finely grated cauliflower. You may either grate vegetable manually with a grater or use a food processor to do the job quickly, sans much effort.
Here's The Step-By-Step Recipe For Keto-Friendly Coconut Rice:
Ingredients:
Grated cauliflower- 4 cups
Grated coconut- 2 cups
Coconut oil- 2 tablespoon
Curry leaves- 6-8
Mustard and cumin seeds- 1 teaspoon each
Urad and chana dal- 1 tablespoon each
Peanuts- 2 tablespoons
Whole red chilli- 1
Green chilli- 2, slited
Salt- as per taste
Lime juice- as per taste
Method:
Dry roast the grated cauliflower till the moisture is completely absorbed and it turns dry and crunchy. Keep aside
Dry roast the peanuts and keep aside.
Heat oil in a pan. Add red chilli, mustard and cumin seeds and let them splutter.
Add the chana and urad dal and fry till they turn light brown-ish in colour.
Add curry leaves and green chilli and saute for half a minute.
Add the peanuts, roasted cauliflower, salt, lime juice and fry everything together.
Finally, add grated coconut to the rice and give a good mix.
Serve hot.
