Diabetes is a condition when the pancreas can't produce enough insulin or the body is not able to process the insulin available. This leads to a spike in blood sugar levels, which can further lead to many health issues. It is important to keep blood sugar levels in check, and besides medications prescribed by doctors, our diet can play a significant role too. Switching to low glycaemic foods is often advised. We make our everyday rotis with whole wheat flour. Moving to bajra, a non-gluten flour, can be helpful.

Bajra (or black pearl millet) flour contains complex carbohydrates of good quality, which may aid the slow release of glucose in the bloodstream. Consultant nutritionist Rupali Datta reveals, "The starch present in bajra s digested slowly, which is converted to glucose slowly. Also, bajra is high on magnesium content, making it a great flour for diabetics."

So, here we have for you an easy recipe of roti made with bajra and palak. Palak (spinach) is another diabetes-friendly food, which has low-glycaemic index, is low in calories and rich in fibre.

Bajra Palak Roti Recipe For Diabetes Diet -
 

Ingredients for 4 rotis:

Half cup bajra flour
Half cup spinach leaves
2 tbsp whole wheat flour (atta)
1 green chilli, finely chopped
1 tsp ginger, chopped
1 tsp garlic chopped
1tsp cumin seeds
Salt as per taste
Red chilli powder as per taste
1 tsp garam masala powder
1 tbsp oil for kneading

Method:

Step 1 - Heat some oil in a pan, add cumin seeds and let it crackle.

Step 2 - Add garlic and ginger and saute for a minute. Add spinach leaves and some salt. Cook for 2-3 minutes till spinach wilts. Let it cool.

Step 3 - Knead the dough with bajra, atta and spinach mixture. Add 1 tbsp oil for binding, some salt, red chilli powder, garam masala powder and chopped green chilli for flavouring.

Step 4 - Cover the dough and let it rest for around half an hour. Then make rotis/parathas with it and cook on both the sides with some ghee.

Serve this bajra palak roti with curd, raita or any sabzi of your choice. For kids, you can smear the yummy paratha with lots of butter and they will love it.
