At my house, evenings bring existential crises about the purpose of life. In other words, we contemplate what snack we should feast on that day. After all, what's the meaning of life without delicious food? My mother is a genius chef and she is our saviour during such crises. She has mastered not only the intricacies of cooking but also another, much rarer talent - the ability to whip up dishes that meet the precise moods and tastes of every single person in our family. Fortunately for her, we are more or less united in our love for crispy fried snacks. But that does not always make her job easier, as there are so many options out there. The rest of us tend to quickly grow tired of the classics and long for variety. The result? My mom's simple yet ingenious experiments with snacks.

To some, there might be nothing unique about this bread roll. After all, it may seem like just another snack stuffed with paneer andcheese, instead of either one. Yet I can recommend this recipe in all honesty because I have relished its result multiple times. I have seen so many of our friends hold up the snack in wonder, bite into it carefully and then scream, "It's so yummy, Aunty!" Some ask her how she makes it, and she is quick to share her tips and tricks. The rest of us just devote our attention to devouring as many as we can. I also think that this snack derives its deliciousness from its specific balance of spices and textures. After all, it's not every day that you find a recipe using paprika and amchur! Cheesy and soft inside, delicately crisp on the outside, these bread rolls have quickly become my favourite. Here is how you can make them at home:

Allow me to leave you with a final suggestion. Don't just pair these rolls with ketchup or hari chutney. Mix the two together to make a tangy-spicy dip and then eat the rolls with that. Believe me, the combination of flavours is just amazing!
