Chai time and snacks are synonymous to each other. Aloo tikki, pakodas, samosas and bread rolls are some of the most popular tea-time snacks that have been appealing to the Indian taste buds since time immemorial. But what if we say that you can now add a slight healthy touch to those deep-fried goodies?! Intrigued? Well, we are talking about raw papaya kebabs that can be made by combining raw papaya with boiled potatoes, besan and a melange of Indian spices. Raw papaya is said to be replete with various health-benefiting properties. In comparison to its ripe version, raw papaya has a lot more active enzymes; it tends to retain all its natural enzymes since it is picked when it's green.

The addition of besan will help bind the kebabs and further prevent them from breaking during the pan-frying process. If you have some fresh plums stocked up in the kitchen, bring them to use and prepare delicious chutney instead. The earthy flavour of these kebabs is sure to complement the sweet and sour flavour of aloo bukhara (plum) chutney. Oh, and the presence of star anise and black pepper imparts a strong pungent flavour in the chutney as well.
