This year's lockdown period made momo lovers like us learn, practice, and ace the cooking process of momos - be it chicken momos or paneer momos or vegetable momos. You can't call yourself a true momo buff unless you've tried all possible versions of momos there can be. Egg momos are for all of us who want to explore the gastronomical world of India-specific Indo-Chinese cuisine.

An egg is full of proteins, and that's why it is so commonly consumed for breakfast almost every day. Combining the goodness of eggs with our favourite snack is our attempt at making momos healthier and guilt-free to eat. Bonus - you don't have to wait all day, you can have it for breakfast too.

Eggs are rich in proteins. 

Egg Momos Recipe:

Ingredients:
(5-6 momos)
1 cup maida
3 eggs
1 small onion (or spring onion), chopped
1 capsicum, chopped
Half tbsp ginger-garlic paste
Salt to taste
1 tbsp soya sauce
1 tbsp tomato sauce
1 tsp red or green chilli sauce
Black pepper powder to taste

Method:
Step 1 - Knead the dough with all-purpose flour, some salt and water. Make sure the dough is not too hard and not too soft. Cover it and let it rest for half an hour.
Step 2 - In a pan, heat some butter and olive oil. Saute onions and ginger-garlic paste till brown.
Step 3 - Add chopped capsicum and saute for 5 minutes. Add soya sauce, tomato sauce, chilli sauce, salt and black pepper and saute for a minute.
Step 4 - Crack the eggs on the onion-capsicum mixture and stir to make scrambled eggs along with the mixture.
Step 5 - Stir till the eggs are cooked and turn off the gas.
Step 6 - Make palm-sized rotis with momo dough. The roti will be used as momo wrapper so it should be thin and slightly translucent. Fill the rotis with egg mixture and fold them while shaping them as per your desire.
Step 7 - Now steam the momos for about 10 minutes and your egg momos are ready.

Egg momos will taste great with the regular momo chutney that you can make at home easily with this recipe. Enjoy!
