If you are wildly zealous for exploring different cuisines, you don't have to look too far. Indian cuisine is an amalgamation of so many regional cuisines that offer a variety of foods with unique flavours and experiences. We combed through some never-tried-before recipes, ignored a ton of banal ones, and picked this Goan delicacy that surprisingly turned out to be better than we thought. Veg Sorak Curry is a traditional Goan dish that is a common go-to quick-fix dish for a light yet flavourful meal.

Goan Veg Sorak is a red curry made with coconut, kokum and a striking spice paste made with a range of Indian spices. Goan cuisine largely consists of fish-based curries. Sorak curry is often made around the monsoon season when the fishing activities are down due to the heavy rainfall. Kokam, a Konkan fruit that looks like cherry tomato, is used to flavour this curry. However, if you don't have access to kokum, you can use tamarind pulp (imli) instead. Also, you can replace coconut oil with any cooking oil of your choice.

Step-By-Step Goan Veg Sorak Curry Recipe -

Ingredients -

For spice paste

1 cup grated coconut
4 Kashmiri whole red chillies
Half tsp cumin seeds
Half tsp turmeric powder
Half tbsp coriander seeds
2-3 black peppercorns

For curry

1 large onion, grated
1 medium tomato, grated
4-5 garlic cloves, grated or crushed
5 kokum/1 tbsp tamarind pulp
1-2 green chillies, slit
Salt as per taste
Coconut oil for cooking

Method -

Step 1 - Dry roast all the whole masalas and coconut till they are fragrant - grated coconut, whole red chillies, cumin seeds, coriander seeds and peppercorns. Bring the spices to room temperature and grind along with turmeric powder and some water to make a smooth paste.

Step 2 - Heat coconut oil in a deep-base pan. Saute onions and garlic, then add tomatoes and the prepared spice/masala paste and saute till tomatoes wilt.

Step 3 - Add water, kokum or tamarind pulp, salt and green chillies and bring it to boil. Simmer for a couple of minutes and turn off the gas. Goan Sorak curry is now ready to be served.
