What Is Ghanta Tarkari?

Ghanta Tarkari is a traditional mixed vegetable delicacy from Odisha. This Odia dish, also sometimes called simply "Ghanta," has a curry-like consistency. It can be savoured with rice and scooped up with rotis. Many different vegetables are used to make this dish, and it can be customised according to taste and availability. Common choices include potatoes, pumpkin, tomatoes, brinjal, different types of gourds and beans, etc. Yam may also be added. Like in Santula, panch phoron - the traditional spice mix - gives this dish a lovely aroma. But the flavour quotient is also taken up a notch by the addition of special garlic paste, as you will discover.

Ghanta Tarkari can provide you with many vitamins, minerals and antioxidants because it contains such a wide variety of vegetables and spices. Only a small amount of oil or ghee is used for sauteing them, and there aren't any especially high-calorie ingredients required. How To Make Ghanta Takarki At Home | Quick And Easy Recipe For Odia Mixed Vegetable Curry By Chef Senapati

Prepare a tadka spice mix by combining fennel (saunf) seeds, mustard (rai) seeds, fenugreek (methi) seeds, nigella (kalonji) seeds and cumin (jeera) seeds in equal proportions. Set aside. Next, make a smooth paste by blending cumin, ginger-garlic paste, poppy seeds (khus khus), coriander seeds and whole red chillies with a little water. Keep ready. Heat ghee/ oil in a kadhai or pan. Add the tadka spices, extra whole red chillies and chopped onions.

Then add mixed vegetables, salt to taste and turmeric powder. Cover the vessel and allow it to cook for around 20 minutes. The heat should be on low. Later, mix in the paste and again allow the vegetables to cook for some time, covered. Serve the dish hot with rice, rotis, bread, etc.
