One such constant item that you'll often find on lunch tables is the classic puri. Soft, fluffy, and perfectly golden, this deep-fried bread pairs well with almost any dish and is always a delight to indulge in. Be it bedmi puri, palak puri, or even stuffed variations made with gobhi or any other veggie, the truth is that they all taste incredibly delicious. What Is Masala Chana Dal Puri?

Traditionally, puri is made with whole wheat flour, but this one is made using chana dal. It is ground to a smooth paste and combined with a host of flavourful masalas. The addition of suji helps make these puris extra soft and fluffy. The taste of chana dal and spicy masalas in the dough gives the puri a unique twist. It is usually served with refreshing raita, aloo sabzi, achaar, or chana masala to put together a wholesome meal.

This recipe has been shared by food blogger Parul on her YouTube channel 'Cook With Parul.' Begin by washing the chana dal nicely, and then soak it in water for 3-4 hours. Once done, strain the water and transfer it to a mixer grinder. Add ginger, jeera, fennel seeds, dried red chillies, black peppercorns, garlic cloves, and water. Grind to form a smooth paste. Now, transfer this paste to a plate and add Kashmiri red chilli powder, hing, haldi, coriander powder, garam masala, salt, and crushed ajwain. Mix well. To ensure they remain fluffy, add semolina (suji), oil, and crushed kasuri methi. Combine everything together and add coriander leaves.

Cover the mixture with a plate and allow it to rest for 5 minutes. Next, gradually add atta and mix well to form a smooth dough. Apply some oil on top, cover with a cloth, and let it rest for a few minutes. Knead the dough again and divide it into equal-sized balls. Roll them out evenly to make puris. Heat oil in a kadhai, slide them in, and cook until they become golden brown and crispy. Remove excess oil by transferring it to a plate lined with tissue paper. Serve with raita or aloo curry, and enjoy!
