After slogging in the kitchen to prepare all three meals for the family, nobody really wants to spend much time in making evening snacks too. Instant snacks options are a big hit for all the right reasons. Here is a recipe of crispy rice snack that you can make in bulk and use it further to make a variety of snacks in a jiffy. Kuzhalappam (or rice flour cannoli or rice shell) is a popular snack in south India, especially, Kerala, and is worth a try.
This crispy and crunchy rice roll can be made in all of 10 minutes. This recipe video posted on YouTube channel 'Cook With Parul' shows an easy method to make this yummy snack. Grind onion, garlic, desiccated coconut and cumin with some water to make grainy paste. Boil salt and some oil, onion-garlic paste and rice flour and kalonji in water (some people also use sesame seeds (til) in place of kalonji). Knead dough with the mixture and make shells with it and deep fry them.
Now you can store these rice shells in an air-tight jar for up to a month and fill them with any kind of stuffing you like - mayonnaise mixed with veggies, spicy aloo masala, creamy paneer mixture and so on. Decorate the rice snack with sev, coriander leaves, oregano and what not! Make this south Indian snack according to the taste preference of your family and enjoy a fun-filled evening get-together. You can also make these for breakfast and nobody will ever complain.
