While some may call it innovative, one can argue that the delicacy is best enjoyed when made out of actual potatoes. Mashed potatoes are a common accompaniment to many dishes - for instance, the British delicacy known as Bangers and Mash. In other countries, this simple appetiser is served along with meat, fish and boiled vegetables. But mashed potatoes can be used in innovative ways to make various other dishes too. 1. Egg and Mashed Potatoes Frittata

This dish makes for a yummy, protein-rich breakfast. To make Egg and Mashed Potatoes Frittatas, you first need to saute onions and ginger-garlic paste. Next, add oregano, salt, red chilli flakes as well as capsicums to the pan. Start stir-frying and then add your leftover mashed potatoes. If you are baking the dish, transfer the mixture into a flat bowl. Break the eggs on top (3-4 if you have a leftover mash of 4 potatoes). Sprinkle bread crumbs and add grated cheese on top of the eggs. Put the bowl in the oven and bake till the top layer turns brownish and the eggs are almost cooked. You can also cook this dish on the stove. Simply break the eggs into the pan with the remaining ingredients and keep its lid closed until the eggs are cooked. This dish is an amazing tea-time snack. To make Aloo Ke Gola Kebabs, first grate beetroot, cabbage, carrot and capsicums. Chop coriander, green chillies and onions. In a large bowl, add all these ingredients to your leftover mashed potatoes. Use a potato masher to mix them together. Add a roasted mixture of besan and maida, along with bread crumbs, to the mashed potatoes and veggies. Add red chilli powder, roasted jeera powder, turmeric powder, and coriander powder and mix. Make short cylindrical shapes out of this mixture and skewer them in the middle with a long toothpick or tandoori stick. Heat oil in a pan and fry the kebabs until brown. If you wish to make something simpler out of leftover mashed potatoes, this recipe is perfect. To make the filling, flash fry green chillies in olive oil. Transfer the mashed potatoes to the pan. Add kaffir lime leaves, curry powder, boiled peas, red chilli powder, coriander powder and salt. (If your mashed potatoes were already seasoned, don't add too much salt and spices at this stage). If you're looking for a non-vegetarian dish, these chops are a wonderful choice. Shape the mashed potatoes into balls and then flatten them to make rough circles. Dampen your hands before doing so to resist the stickiness of the potatoes. Place one portion of cooked keema in the centre. Ensure that the keema is as dry as possible to avoid having a heavy filling. Seal the edges together on top to form spheres, lightly flatten them and roll them in maida. This delicacy is a lovely combination of flavours and textures. To make Bihari Aloo Chokha, roast tomatoes in a pan and add them to the mashed potatoes. Mash them together. Add salt, red pepper flakes, cumin powder, coriander powder, and finally, the sliced onion and coriander leaves. Mix all elements well. Add mustard oil at the end.
