Yes, the Holi weekend is finally here. As Holi this year falls on Monday (March 29, 2021), we get to enjoy an extended weekend. While some of us are heading off for short vacations, others are staying back at home to relax and spend quality time with family and friends. If you choose to do the latter, food has a major role to play. Many of us will have guests coming over, meaning we need to prepare various delicious meals in the coming three days. Holi meal spread generally includes dahi bhalla, dal kachori, chana masala, puri, gujiya, thandai et al, but we always have rooms to experiment and put up a great show.

Considering this, we found a unique gobi recipe for you that can be paired with paratha, roti and naan; or you can stuff it in dough and make stuffed paratha or puri with it. It is called gobi bhurji. Besides a pool of flavourful spices, what makes this dish tastier is its wonderfully roasted flavour. Yes, you need to roast it before making the bhurji.

How To Make Gobi Bhurji | Gobi Bhurji Recipe:

For this dish, we need cauliflower, black pepper, cardamom, clove, cinnamon stick, coriander seeds, cumin seeds, oil, dried red chilli, onion, green chilli, ginger-garlic paste, tomato, boiled peas, Kashmiri red chilli powder, turmeric powder, kasuri methi and dahi.

Step 1. Blanche the whole cauliflower, grease some oil on the top and set it on the gas stove. Grate and keep aside.

Step 2. Now, make a masala paste with black pepper, cardamom, clove, cinnamon stick, coriander seeds, cumin seeds, oil, dried red chilli and a small onion.

Step 3. Heat oil and add cumin seeds, onion, ginger-garlic paste and green chilli and cook till the onions turn translucent in colour.

Step 4. Add tomatoes and salt and cook till tomatoes are soft.

Step 5. Add boiled peas, the masala paste, red chilli and haldi powder and Kasuri methi leaves. Mix everything well. Add some water and mix again.

Step 6. Add beaten dahi and mix. You can replace curd with fresh cream.

Step 7. Now, add the grated cauliflower, some water, mix them and close the lid until the cauliflower is cooked.

Step 8. Sprinkle some freshly chopped coriander leaves and serve.
