Winter is still here and what better way to embrace the chilly days than with hearty soups? Soups are not only comforting but also delicious and healthy, making them a perfect winter treat. From classic tomato to leeks, cauliflower, and mushroom, endless soup options exist. You can enjoy them with bread, on their own, or as a tasty snack. Hollywood actress Courteney Cox recently shared her new cauliflower soup recipe on Instagram, and it's delicious! Courteney's delightful dish is a must-try for a cosy winter meal.
How To Make Courteney Cox's Cauliflower Soup
To create this delicious dish, the actress used the following ingredients - 2 medium heads of cauliflower (cut into medium-sized pieces), 4 ribs of celery (also cut into medium-sized pieces), 1 medium white onion (chopped), 1/2 bulb of fennel (sliced), 1 tablespoon of fresh thyme leaves, 12 cups of chicken or vegetable stock, 1 teaspoon of salt, and 1 tablespoon of white truffle oil. To follow Courteney's recipe, in a large pot, combine all the ingredients, excluding the truffle oil. Bring the mixture to a boil, then reduce the heat to medium-low and cook for 20-30 minutes until the vegetables are tender. Blend the soup in batches, adding the truffle oil slowly while the blender is running. Season the soup with salt and white pepper to taste. Voila, your soup is ready!
