If you are trying to follow a low carbohydrate diet, you are in for a treat. But first let us understand what a low-carb diet is. According to some weight-loss experts and fitness coaches, carbs get metabolised too soon, leaving you hungry soon after. You start craving for a quick snack which results in calorie-overload. Now a low-carb diet, does not restrict the consumption of carbs, but asks you to monitor it. Another interesting feature about this diet is choosing the 'right' kind of carb. Foods rich in fibre and complex carbs do not breakdown too soon and thus keep you satiated for long.

Paneer, non-starchy greens, seasonal vegetables, and healthy flours could help you cut down on your carb intake very easily. We decided to club the goodness of these in a super satiating kathi roll. Here goes the recipe.

Besan Kathi Roll With Paneer Recipe:

Ingredients:

  • For besan ki roti:
  • 200 gram Gram Flour (Besan)
  • 100 gram Whole wheat Flour
  • 1 tbsp Onions, chopped
  • 1/2 tsp Green Chilli, chopped
  • 1 tbsp Fresh Coriander, chopped
  • 1 tsp Red Chilli Powder
  • Oil as required
  • Salt as required

For Kathi Roll Stuffing:

  • Tawa Paneer Tikka, handful
  • 1 medium Onion, sliced
  • 3 tbsp of Mint Chutney
  • Chaat masala for taste

Method:

1. Make the dough of besan roti, by combining besan, atta, onions, green chillies, coriander, red chilli powder, salt and pinch of oil. Make a nice firm dough.

2. Pull out small units from the dough and roll them out flat according to the desired thickness; do not roll them too thin, or else the roti can break.

3. Once all rotis are made, start assembling the rolls. Apply a smattering of chutney on the roti, then sneak in the onions, tawa paneer tikka (recipe here) and chaat masala for taste. Roll it up and repeat.
