Kaju masala is quite the popular gravy in dhabas! Often served with tandoori naan or buttery kulcha, this masaledaar and creamy gravy just melt in the mouth. All you need is cashew nuts, tomatoes, ginger-garlic paste and basic Indian seasoning and you can make this creamy gravy at home.

Kaju Masala Recipe: How To Make Dhaba-Style Kaju Masala Curry
First, you will need to prepare the ingredients. Saute one cup of cashew in butter till they are golden and keep this aside. Saute bay leaf and tomatoes in butter. Once the tomatoes are mushy, discard the bay leaf and grind the tomatoes to a puree. Grind 18-20 cashews into fine powder.
Next, fry the ginger-garlic paste in butter till the aroma goes away. Add the cashew powder and roast it till the powder is golden. Add the tomato puree, chilli powder, water and green chillies. Let the curry cook for a while. Add the fried cashew nuts and season with salt. Finish up the gravy by adding garam masala, cream and crushed kasuri methi. The kaju masala curry is ready!
