Ingredients of Vegetable Moilee

  • 2 Tbsp Coconut oil
  • 1 Onion, finely chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 green chilies, split lengthwise
  • 1 tsp turmeric powder
  • 1 tsp chili powder (adjust according to your spice preference)
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 cup mixed vegetables (carrots, bell peppers, cauliflower, peas)
  • 1 cup coconut milk
  • 1 tsp Tamarind Extract
  • Salt to taste
  • Fresh coriander leaves for garnish

How to Make Vegetable Moilee

Heat Coconut oil in a large pan or skillet over medium heat.

Add the chopped onion and sauté until it turns translucent.

Stir in the minced garlic, grated ginger, and green chilies. Cook for an additional minute.

Add turmeric powder, chili powder, cumin powder, and coriander powder to the pan. Mix well to coat the onions and spices evenly.

Add the mixed vegetables to the pan and sauté for a few minutes until they are slightly tender.

Pour in the coconut milk & Tamarind extract and season with salt. Stir everything together and bring it to a gentle simmer.

Reduce the heat to low, cover the pan, and let the curry simmer for about 10-15 minutes or until the vegetables are fully cooked and the Flavors have melded together.
8.
Once the curry is ready, garnish with fresh coriander leaves.
9.
Serve hot with steamed rice.
