Ingredients:
For boiling:
Water – 4-5 cups
Green chillies – 2
Ginger (slice) – ¼ inch
Salt to taste
Sugar – 1 tablespoon
Degi red chilli powder – ½ tablespoon
Asafoetida – A pinch
Black chickpeas (soaked overnight) – 1 cup
Peanuts (with skin, soaked overnight) – 1/3 cup
Soya bean (soaked overnight) – ½ cup
For bouquet garni
Black peppercorns – 9-10

Black cardamom – 1
Cloves – 2-3
For chaat masala
Cumin seeds – 1 ½ tablespoon
Fennel seeds – 1 tablespoon
Black peppercorns – 10-12
Fenugreek seeds – 3-4
Coriander seeds – 1 tablespoon
Cloves – 3-4
Asafoetida – A pinch
Dry mango powder – 1 ¼ tablespoon
Sugar – 1 tablespoon
Salt to taste
Dry ginger powder – ¼ tablespoon
For chana chaat
Ginger (chopped) – 1 inch
Green chillies (less spicy, finely chopped) – 2-4
Coriander leaves (finely chopped) – 1 ½ tablespoon
Medium-sized onion (chopped) – 1
Raw mango (chopped) – ¼ cup
Tomatoes (chopped) – 2
Pomegranate pearls – 2 tablespoons
Lemon juice – 1 tablespoon
Chaat masala – 2 ½ tablespoons
Boiled mixture
Prepared tadka
For tadka
Oil – 2 tablespoons
Cumin seeds – 1 tablespoon
Button chillies – 6 to 7
For garnishing
Pomegranate pearls
Sev (optional)
Coriander sprig
Hot to make healthy chane ki chaat?
1. Add water, green chilli, ginger, salt and sugar to a sauce pot. Put degi red chilli powder, asafoetida, black chickpeas, peanuts and soybean. You need to also add bouquet garni and boil until it is cooked. Strain it in a bowl and keep it aside.
2) In a non-stick pan, dry roast cumin seeds and all the other mentioned spices separately and transfer them into a bowl. Add masalas including asafoetida, dry mango powder, sugar, salt to taste, and dry ginger powder. Grind them together into a fine powder and keep it aside. You may need it later.
3) In a large bowl, put ginger, green chillies, coriander leaves, onion, and raw mango. Also, add tomato, boiled mixture, pomegranate pearls, and lemon juice for a tangy flavour. Sprinkle the prepared chaat masala and mix everything well. Add the tadka and transfer it into a serving bowl. Use pomegranate pearls and sev for garnishing.
