As we are inching towards the festival of Ganesh Chaturthi, modak is on our minds. The Indian sweet dumpling of rice flour layer enclosing nuts, jaggery and other foods is a specialty of this festival. You just need 4 ingredients to make this sweet modak - cashews, ghee, sugar and water. Grind cashews into a fine powder. Make sugar syrup, which is not too thick. Add powdered cashews and mix well on low flame for about 5 minutes. Let the mixture cool down a bit and thicken. Smear the mixture with ghee and shape the mixture into modaks. Usually, moulds are used to make nice, shapely modaks. But, if you don't have mould at home, this recipe will show you how to do it with a regular spoon! Isn't it amazing?
