Lady finger may be rich in fibre and vitamin C, but still seems like a boring vegetable, doesn't it? Bhindi, as it's known in Hindi, when used with the right ingredients, is anything but boring.

Let's take a look at 4 preparations that will bring bhindi back to your table.





Kolhapuri Crispy Bhindi


Ingredients:
¼ kg lady finger
3-4 tablespoons gram flour
2-3 tablespoons red chilli powder
½ tablespoon chat masala
Oil for deep frying

Method:
  • Wash and dry lady finger and trim both ends. Now cut them into 3 long pieces and make a thin slit on each of them.
  • Put the pieces in a bowl, add gram flour, chilli powder, salt and mix them well until each piece is well coated.
  • Deep fry the pieces until they turn golden & crisp and remove them on a tissue paper. Serve them along with spring onion flowers, carrot and tomato slices.

Jodhpuri Crispy Bhindi

Ingredients:
¼ kg lady finger
1 piece ginger
½ tablespoon black pepper
3 tablespoons chopped coriander leaves
¼ tablespoon turmeric powderMethod:
  • Make elongated thin slits on the lady fingers and put them in a bowl. Now add chilli powder, sesame seeds, gram flour and mix them well, along with few sprinkles of water.
  • Deep fry the coated bhindi and serve hot.

Bhindi fry

Ingredients:
¼ kg lady finger
1 inch piece ginger
8-10 cloves garlic
½ tablespoon black pepper
3 tablespoons chopped coriander leaves
¼ tablespoon turmeric powder

Method:
  • Wash bhindi and slit longitudinally on one side.
  • Grind ginger, garlic, black pepper, chopped coriander and turmeric powder together.
  • Now stuff the mix into the bhindi, while heating 3 tablespoons of oil on a pan.
  • Fry the stuffed bhindi in the oil till it turns crisp and serve as a side dish.

Yet another Bhindi fry variant

Ingredients:
¼ kg lady finger
5-7 red chillies
1 tablespoon channa dal
½ tablespoon sugar
Salt according taste
1 small onion
1 tablespoon coriander seeds
1 tablespoon black gram
2 tablespoons tamarind juice
8 tablespoons oil

Method:

  • Grind onion to make a paste.
  • Now, fry dal, coriander seeds and red chillies, and mix all of the above ingredients together.
  • Slit the okra on one side and stuff the mixture in. Now fry the stuffed okra till it's well done and serve hot.

Bhindi Stew

Ingredients:
¼ kg lady finger
½ tablespoon chilli powder
½ tablespoon chopped ginger
4 garlic pods
1 tomato
¼ tablespoon of turmeric powder
A few curry leaves
½ tablespoon fenugreek seeds
½ tablespoon cumin seeds
Salt according to taste
Onions 50 grams
¾ tablespoon coriander seeds
½ tablespoon cumin seeds
1 clove
1 cardamom
4 black peppers
A few coriander leaves
50 ml milk

CommentsMethod:
  • Dry roast curry leaves, coriander, fenugreek and cumin seeds, clove, cardamom, black pepper, chilli powder and coriander leaves together.
  • Crush the roasted ingredients to make the masala for the stew. Place the masala with 5 tablespoons of water in a pan and cook the mixture on a high flame. Now stir well until all the water evaporates.
  • Add finely chopped ginger, garlic and onion to the mix. You will now have to lower the flame and let it fry for a minute.
  • Add 200 ml of water to the mix and stir well. Add 2 pieces of lady fingers (chopped into two) and chopped tomato. You will once again need to add 50 ml of water and cook the stew on a high flame until the onion turns transparent.
  • Remove the preparation from the flame and add milk. Serve hot in bowl, decorating it with chilli powder and coriander leaves.
