Lemongrass Noodle Soup Recipe: This heart-warming soup with the distinct flavour of lemon grass along with spices such as ginger and garlic along with carrot and beans make for a perfect one pot meal in the winter season.
Ingredients of Lemongrass Noodle Soup
2 Lemon grass sticks
100 gms carrots, chopped
50 gms French beans
5 ml soya sauce
4 Red chillis
10 gms peeled garlic, chopped
1 inch ginger, chopped
10 gms rice noodles
to taste salt
2 gram spring onion, chopped
5 ml oil
600 ml water
How to Make Lemongrass Noodle Soup
1.Make a paste of lemon grass with a little water and strain it.
2.Soak the red chillies in warm water for approximately 20 minutes.
3.Make a coarse paste of soaked red chilli with chopped ginger and garlic.
4.Heat the pan and add oil, then add the vegetables and sauté well.
5.Then add the red chilli, ginger and garlic paste stir well.
6.Add the lemon grass water and rice noodles and boil it for 4 minutes.
7.Season it with salt and soya sauce. Garnish with spring onions and serve it hot.
