How to make Mulagai Thokku
This south Indian style pickle requires just a couple of major ingredients – chilies for heat and tamarind for the tanginess. You can prepare this south Indian pickle in a matter of minutes and store for days.

Ingredients of Mulagai Thokku
- 250 gms Green Chillies
- 1/4 cup Tamarind Paste
- 1/4 cup Jaggery Powder
- 1 tsp Hing
- Salt according to taste

Slit green chilli in the middle or roughly chop into 2 cm long pieces.
Sauté till lightly brown. Add tamarind paste and jaggery to this and mix well.
Make a fine paste of the chilli mix and keep aside.
In a pan, heat some mustard oil and add hing to it, add the green chili paste, salt according to taste and mix well.
Take off the heat and let it cool down completely before storing in an air-tight jar.
