Marinated prawns tossed with butter and herbs. Served with a melba toast and lime spiced butter.

Ingredients of Prawns in Spiced Butter

  • 1 kg prawns - shelled and de-veined
  • 3 Tbsp lemon juice
  • 1 Tbsp oil
  • Salt and pepper
  • 2 Tbsp butter
  • 1/4 tsp yellow mustard seeds
  • 2 split green chillies
  • 2 tsp chopped garlic
  • 1 1/2 tsp oregano
  • 1 1/2 tsp paprika
  • 100 ml fish stock (optional)
  • 2 Tbsp lemon juice
  • Handful chopped garden herbs
  • Melba Toast and Lime Chilli:
  • 4 slices fresh bread
  • 1 Tbsp softened butter
  • Grated rind 1 lime
  • 1 green chilli - deseeded and chopped
  • Coarsely ground black pepper

How to Make Prawns in Spiced Butter

Marinate the prawns for 30 minutes in lemon juice, oil and seasoning.

Heat butter in a heavy pan. Toss in mustard seeds and chillies.

After 15 seconds, stir prawns, garlic, oregano and paprika.
4.
Fry until coloured and cooked.
5.
Pour in stock, followed by lemon juice. Season.
6.
Serve garnished with fresh herbs.

For the melba toast:

1.
Remove crusts from the bread.
2.
Flatten slices with a rolling pin.
3.
Bake at 160 degrees c until crisp and golden.

To prepare the butter:

1.
Beat the butter, lime, chilli and pepper together.
2.
Serve with the melba toast.
