Radicchio

It's not exactly a new vegetable, but the pink radicchio or the radicchio de veneto has just made its Instagram debut and it looks too pretty to eat!

Radicchio, although red, certainly qualifies as a grill-friendly "green," and both its royal color and pleasantly bitter flavor deepen beautifully during grilling.

The well-loved Italian chicory called radicchio, now common in North America, comes in many guises.
