Chasni is a sugar syrup most commonly used in India, Pakistan and Nepal. It is a translucent, sticky liquid made by cooking sugar to the required consistency with water. Several flavors can be incorporated in it like rose or saffron.It is believed that the name has been derived from the word chini (sugar). Generally the ratio of sugar to water is 1:1 or 2:1. It is used in a variety of Indian desserts like gulab jamun, jalebi etc.

It's prepareation involves, boiling of water with sugar and stirring till the desired consistency is reached. For foods in which chasni needs to be absorbed, chasni of thinner consistency is to be used. It is called single thread syrup. For sweets that need sugar to set, like barfi and gujia, two thread syrup is obtained by boiling and stirring for a longer time. Three thread syrup is used to make Indian ground sugar. It turns into a hard ball when taken out of the pan.
