For selecting eggs it is important to look at the grade. Eggs are graded in three ways namely Grade AA, Grade A,Grade B.
Grade AA are the best quality eggs and its white is thicker and more firm than Grade A eggs. Both Grade AA and A have clean and unbroken shells.
In grade B eggs, the whites are much thinner and the shells may have slight stains.
Grade A is or AA is preferred for direct consumption while Grade B are mostly used to make egg products.
Most of the big super markets keep Grade A or AA eggs with them whereas small vendors keep Grade B.
