Very high in nutrition, egg is made up of an outer shell, egg white and yolk. Egg yolks and whole eggs store significant amounts of protein and choline. Chicken eggs are the most commonly eaten eggs.
As an ingredient, egg yolks are an important emulsifier in the kitchen. Some of the most common preparation methods are scrambled, fried, hard-boiled, soft-boiled, sunny side up, egg bhurji, omellete.

In India you will most commonly come across two types of eggs, brown and white eggs. Brown eggs are comparatively expensive but that does not reflect on its quality. In nutritional value both are identical. The main difference between the two is that they come from different breeds of chickens.
For selecting eggs it is important to look at the grade. Eggs are graded in three ways namely Grade AA, Grade A,Grade B.
Grade AA are the best quality eggs and its white is thicker and more firm than Grade A eggs. Both Grade AA and A have clean and unbroken shells.
In grade B eggs, the whites are much thinner and the shells may have slight stains.
Grade A is or AA is preferred for direct consumption while Grade B are mostly used to make egg products.
Most of the big super markets keep Grade A or AA eggs with them whereas small vendors keep Grade B.
